There is no definitive list of the absolute best race car manufacturers because there are so many types of racing. 

Chevrolet, Ferrari, Ford, Mercedes-Benz, McLaren, Porsche, are often regarded as pinnacles of racing. Yet others, such as Alfa-Romeo, Audi, BMW, Honda, Renault, and many more have been very successful through the years.

According the the NASCAR Hall of Fame, the top five manufacuters in Cup Series victories are Chevrolet, Ford, Dodge, Plymouth, and Toyota.
